I love these little guys! They are quick and easy to make, and taste so yummy. I got the original recipe Here, at gimme some oven, but modified a few of the ingredients.
No Bake Energy Bites
Ingredients:
- 1 cup old-fashioned oats
- 2/3 cups coconut flakes (you can used toasted coconut, but regular coconut flakes work just fine)
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/3 cup agave syrup (honey works as well)
- 2 tsp vanilla
- 1/2 cup chocolate chips (you can substitute dried cranberries or blueberries for a different take)
Directions:
- Stir all the ingredients together, except chocolate chips, in a medium bowl until thoroughly mixed.
- Stir in chocolate chips until just combined.
- Allow to chill in refridgerator for 30 minutes.
- Once chilled, roll into balls. I make about 1-1 1/2 inch balls, but you can do whatever size you like.
- Store in container in fridge for up to a week.
