Hey hey! If you remember my very first Tiff's Favorites post, I mentioned an awesome Crock Pot chicken chili that I love.
Well I have a recipe that I have adapted from that one (that's a little bit healthier) and is fabulous!
Ingredients:
* 3 chicken breasts
* 1/2 onion, diced
* 1 8 oz package light cream cheese
* 1 can black beans, drained and rinsed
* 1 can corn, not drained
* 1 can diced chilies
* 1 tbsp chili powder
* 1 tsp cumin
* 1 tsp onion powder
* 1/2 tsp garlic powder
* 1/4 tsp cayanne pepper
* 2 garlic cloved, minced
* 1 tbsp EVOO
Directions:
* Add all the ingredients (except the cream cheese) to a Crock Pot and stir.
* Add cream cheese but don't stir in.
* If you use frozen chicken: cook on high for ~6 hours.
* If you use fresh chicken: cook on high for ~4 hours.
* Shred chicken before serving and stir.
Enjoy!


I make chicken chili all the time but I never thought to have a creamy base (mine is tomato-based). This is awesome! Thanks!

I love it! We really don't eat beef anymore so this looks exactly like chilli that I would eat if I still at beef with chicken. I pinned this one for sure!

Just curious about the cream cheese, you put it in the whole time?? I've always been told to put it in the last hour. but this recipe sounds delish!

ReplyDeleteHi Amber, it's a little spicy, but if you reduce the chili powder and cayenne pepper it will calm it down a lot. My 2 year old eats it and loves it.

Do you put three whole raw chicken breasts in the crock pot?? Or are they cooked?
